Bruschetta with tomatoes

Nothing better than a plain bruschetta when you fancy a healthy snack after an intense workout, or for an aperitif with friends. Suddenly, I look back at the old times, when I used to spend my afternoons at the tennis club and I used to have a snack in the garden of the club after a workout or a match. Neither my mom, nor my granny prepared it, but the nice lady (we called her ‘the lady of the tennis) who ran the club would make bruschette for me and all my teammates. We had a break, recovered our energies and went back to the courts stronger than ever. I used to be very competitive- I always wanted to win, even if my defeats have been much useful and instructive than an easy victory 6-0-6-0. Defeats teach you about your limits, and how you can go beyond them properly.
Anyway, let’s come back to our bruschette. In Italy, they often mean a drink with friends, but our grannies used to prepare them as rustic snack in the afternoon instead of industrially processed sweets. They are healthy, tasty, with plenty of colorful summery products. Everybody likes them.
Simple and plain ingredients which represents Italy: bread, tomatoes, extra virgin olive oil, and salt. That’s all! Of course, you can make bruschetta richer to your taste, believe me, it will satisfy even the most refined palates in the family, both children and adult!

Ingredients

  • 2 slices of rustic bread
  • 100 gr Ripe diced tomatoes, or dried tomatoes, or tomato purée
  • 2 tbsp Extra virgin olive oil
  • Ground oregano
  • A glove of garlic
  • Olives to taste
  • Capers to taste
  • Salt
Servings 2 people

Instructions

  • Slightly toast the bread in a grill pan or in the oven. Drizzle the oil over the hot bread, and then rub the garlic onto the top sides. Spoon the dices tomatoes onto the grilled slices of bread. For a stronger taste, add some dried tomatoes too. You can prepare your own bruschetta to your taste.
  • Sprinkle with oregano, and add some olives and capers, it will get really appetizing.
