Sicilian lemon granita

Warning: really flavorful but high calorie recipe! Sicily also means granita: it’s thirst-quenching, cool, sweet, juicy. 
Do you want to taste it?  I have got a surprise for you: lemon granita recipe! It looks easy to prepare, but some useful hints make it perfect: not too icy, not too sweets, not too sugary. 
Well, here there is not the nutritionist’s recipe! I still haven’t found a “light” recipe of this delicious dessert. If you are on a low-calorie diet, have it only on very special days, once a week. Don’t exaggerate and your scale won’t scold you! 
Don’t feel guilty: granita is scrumptious, so enjoy it.

Ingredients

  • 1 liter Water
  • 500 gr Sugar
  • 500 ml Lemon juice

Instructions

  • Opt for ripe juicy organic lemons. Squeeze them: you need about 130gr of juice. In a steel (the best material for this recipe) bowl, pour the sugar and the lukewarm water. Stir until the sugar has melted. Them add the lemon juice. 
  • Put it into the freezer. After an hour scarp the ice around the edges of the bowl with a fork and stir quickly. Repeat the process every two hours until granita is smooth and consistent. The ice crystals have to be homogenous without any lumps. 
  • It will refresh you in the hottest days of the year, serve with in a nice glass, or with a “brioche”, the typical Sicilian breakfast.
