Opt for ripe juicy organic lemons. Squeeze them: you need about 130gr of juice. In a steel (the best material for this recipe) bowl, pour the sugar and the lukewarm water. Stir until the sugar has melted. Them add the lemon juice.
Put it into the freezer. After an hour scarp the ice around the edges of the bowl with a fork and stir quickly. Repeat the process every two hours until granita is smooth and consistent. The ice crystals have to be homogenous without any lumps.
It will refresh you in the hottest days of the year, serve with in a nice glass, or with a “brioche”, the typical Sicilian breakfast.
