One Pot Chicken

This recipe is a perfect inspiration for an easy and quick complete meal.

Ingredients

  • 4 chicken breasts
  • 2 tbsp olive oil
  • ½ pound small gold potatoes
  • 1 sprig fresh rosemary
  • ½ pound green beans
  • Salt and Pepper

Sauce

  • ¼ tbsp whole grain mustard
  • 2 tbsp Dijon mustard
  • cup honey
  • 1 tbsp apple cider vinegar
  • ½ tsp smoked paprika
  • 1 tbsp olive oil

Instructions

  • Heat 2 tablespoons of olive oil in a pot.
  • Season the chicken breasts with salt and pepper.
  • When the olive oil is hot, brown the chicken breasts on both sides.
  • Once the chicken is golden brown on both sides, remove the chicken breasts.
  • In the same pot, add the potatoes and rosemary.
  • Bake in the oven at 180℃/375℉ for 15-20 minutes.
  • While the potatoes are cooking, prepare the sauce.
  • In a bowl, combine oil, paprika, honey, vinegar, classic mustard, and Dijon mustard.
  • Mix the sauce well with a whisk and set aside.
  • Remove the potatoes from the oven and add the green beans and chicken breasts to the same pot.
  • Add all the sauce to the pot and mix well.
  • Bake in the oven at 180℃/375℉ for 20 minutes with the lid on.
  • Finish cooking for another 10 minutes without the lid.
  • Serve directly from the pot to the table or on a large plate.
