Thousand Layers Potatoes are the ultimate side dish.

Ingredients

  • 6 large potatoes
  • Salt and Pepper
  • 2 tbsp olive oil
  • 1 l sunflower oil
  • salt flakes

Instructions

  • Peel the potatoes.Using a mandoline, slice the potatoes lengthwise.
  • Place the potatoes in a bowl and season with oil, salt, and pepper.
  • In a high-sided baking dish, arrange the potatoes evenly on top of each other.
  • Be sure to fill the edges well.
  • Bake covered with aluminum foil for one hour at 150C/300F.
  • Let cool, then refrigerate for at least 8 hours.
  • Cut the potato terrine into cubes of roughly the same size.
  • Heat the vegetable oil to 190℃/375℉.
  • Fry the potato cubes until golden and crispy.
  • Finish with flakes of salt.Enjoy your meal!
