Spicy Eggs and Tomato

Spicy eggs and tomatoes are the perfect way to kickstart your day.

Ingredients

  • 4 eggs
  • 14 oz canned tomatoes
  • 1 golden onion
  • 2 fresh chili pepper
  • ½ tsp chili flakes 1 dried chili pepper
  • Salt and Pepper

Instructions

  • Finely chop the onion and fresh chili peppers.
  • In a shallow pan, heat a tablespoon of oil over medium heat.
  • Add the chopped onions, fresh chili, and dried chili.
  • Sauté for a few minutes until the onions are soft.
  • Add the canned tomato sauce.
  • Season with salt and pepper.
  • Cook for 5-6 minutes over medium heat to reduce the sauce and remove any excess water.
  • Using a spoon, create small wells in the tomato sauce.
  • Add the eggs and cook with the lid on for 3-4 minutes.
  • Serve hot and enjoy!
