Ingredients

  • 10 oz fresh spinach
  • 2/3 cloves garlic
  • 2 fresh pepper
  • 2 tbsp olive oil
  • 5 oz feta cheese
  • Salt and Pepper

Instructions

  • Clean the garlic cloves and chop them finely with a knife.
  • Cut the fresh peppers in half and slice them into strips.
  • In a skillet, add oil and set the temperature to medium.
  • Add the chopped garlic and sliced fresh peppers, and cook over medium heat for 3-4 minutes.
  • Add a generous amount of fresh spinach, and season with salt and pepper.
  • Cook for 5 minutes over medium heat until the spinach is well wilted.
  • With the help of a spoon, create space for the eggs.
  • Add the eggs and cook for 4 minutes with the lid on.
  • Finish the dish with crumbled feta, fresh pepper, and a drizzle of oil.
