- 10 oz fresh spinach
- 2/3 cloves garlic
- 2 fresh pepper
- 2 tbsp olive oil
- 5 oz feta cheese
- Salt and Pepper
Clean the garlic cloves and chop them finely with a knife.
Cut the fresh peppers in half and slice them into strips.
In a skillet, add oil and set the temperature to medium.
Add the chopped garlic and sliced fresh peppers, and cook over medium heat for 3-4 minutes.
Add a generous amount of fresh spinach, and season with salt and pepper.
Cook for 5 minutes over medium heat until the spinach is well wilted.
With the help of a spoon, create space for the eggs.
Add the eggs and cook for 4 minutes with the lid on.
Finish the dish with crumbled feta, fresh pepper, and a drizzle of oil.
