Even if the ingredients are organic and of good quality, we never forget to wash them well and thoroughly.

Unfortunately, red onions cannot be replaced with golden or white ones. The taste of the latter is completely different.

Ingredients

  • 2 large cucumbers
  • 1 orange
  • 2 tbsp olive oil
  • 4 slices white bread
  • 1 tsp butter
  • 1 Red onion
  • 150 gr feta cheese
  • Salt and pepper
Servings 4 people

Instructions

  • Using a mandoline, thinly slice the cucumber.
  • Julienne the red onion.
  • In a pot with high sides, cook the sliced red onion with white vinegar over medium heat.
  • Once all the vinegar has evaporated, let the red onion cool.

Dressing Preparation

  • Squeeze a whole orange into a glass bowl.
  • Season the orange juice with salt and pepper.
  • Slowly add the olive oil to the orange juice while continuing to stir. The dressing is ready when it is well homogeneous and mixed.

Bread Croutons Preparation

  • Heat a non-stick pan over medium heat.
  • Butter the slices of white bread on both sides.
  • Toast the slices of bread until they become golden crispy.
  • Cut the toasted and buttered white bread into small squares.

Assemble the Salad

  • Arrange the sliced cucumber in a deep plate.
  • Crumble the feta cheese by hand, distributing it evenly.
  • Add the caramelized onion and toasted croutons.
  • Season all parts of the salad well with the dressing.

How to store it

Cucumber feta salad can be stored for no more than a day in the refrigerator covered with plastic wrap.

Tips and Tricks

Salads in general are among the most customizable recipes ever. Try experimenting with new ingredients and preparations for a different recipe every time.

Red onions should only be cooked in white vinegar. Using another type of vinegar would completely change the final result.

To have the cucumber cut into equal parts, it is advisable to use a mandoline; cutting it with a knife is very difficult and less precise.

Instead of orange, grapefruit or lemon can be used without any problems. It is not recommended to add ingredients like yogurt to the dressing since feta is already present.

Instead of buttered and toasted white bread, we can use dried fruit such as almonds.
