pick the right Ingredients

Saffron Cheese Risotto is a recipe that enhances the flavor of saffron and cheese cream. As with all recipes with few ingredients, it’s best to select high-quality ingredients.

Saffron: There’s no problem using saffron powder. Saffron threads can be very expensive or hard to find.

Rice: The rice should be Arborio or Carnaroli. You can recognize it by its short, wide grain.

Broth: You can also use store-bought broth without any problems. Making broth at home has the advantage of being able to customize it more for taste and intensity.

Cheese: You can use all types of cheese according to your taste. A cheese that pairs well with Saffron Cheese Risotto is scamorza with the addition of Parmesan. Too intense or smoked cheeses could overpower the saffron flavor.

Tips & Tricks

  • The cheese cream is very easy to make, the important thing is not to let the cream boil.
  • If the temperature is too high, the cream will separate, and you will have to start over.
  • Keep the temperature under control and mix well.
  • You can use all types of cheese to make the cream.
  • If using hard cheese, cut it into small pieces or grate it before adding it to the saucepan.
  • Temperature is crucial in this recipe. Keep the temperature medium-low throughout.
  • The optimal rice for risotto is Arborio or Carnaroli.
  • You don’t need to use expensive white wine.
