Ingredients

  • 20 gr butter
  • 20 gr all-purpose flour
  • ½ l milk
  • 300 gr maccheroni pasta
  • 100 gr Emmenthal cheese
  • 100 gr Gouda cheese
  • 100 gr Cheddar
  • Salt and Pepper

Instructions

  • Dice or grate finely the cheeses and set aside.
  • Preheat the oven to 180C/375F on the grill setting.
  • In a large pot, cook the pasta, remembering to drain it 2/3 minutes before the cooking time indicated on the package.
  • Melt the butter in a pot with high sides.
  • Once the butter is melted, add the flour.
  • Mix well using a whisk for a few minutes.
  • Continuing to stir, add the milk over medium-low heat.
  • When the béchamel sauce begins to thicken, add 3/4 of the cheese.
  • Mix the sauce well until it is smooth.
  • Drain the pasta and add it to the cheese sauce.
  • Mix well and transfer the pasta to a high-sided baking dish.
  • Sprinkle the remaining cheese on top.
  • Bake for 5-6 minutes.
